  hey friends, how's everyone doing? today I am going to show you guys a perfect recipe of Sambhar which we tend to order in restaurants along with Medu Vada, Idli or Dosa the taste of the sambhar will be very authentic along with the recipe, i will keep giving you guys some tips to make a perfectly authentic sambhar let's begin 

Recipe -

take 1 cup (approx. 150gms) of split pigeon peas i have soaked it in water for half an hour add this soaked split pigeon peas in a pressure cooker add 1.5 - 2 cups of water there is no fix measurement of water add as per your measurements normally like you add while cooking the Dal in pressure cooker then add half teaspoon of salt 1/4th teaspoon of turmeric powder then close the lid to cook until 3 whistles or until the split pigeon peas are completely cooked meanwhile let's prepare the masala heat oil in a pan i have added 2 tablespoon of oil here once oil is hot add 1 teaspoon of mustard seeds once they start to crackle, add half teaspoon of fenugreek seeds then add 2-3 dry red chillies 1 finely chopped green chilie (you can adjust the quantity of chilie as you want) 10-12 curry leaves 1/4th teaspoon of asafoetida asafoetida is very important, so don't skip it it gives an amazing flavour to Sambhar give it a mix and cook for 20-30 seconds then add 1 onion cut in julienne you can finely chop the onions as well but julienne tastes better let it cook for 2-3 mins until it turns pinky and little mushy don't over cook the onions otherwise they will taste bitter it's been 3-4 mins onions have turned pink and mushy now we will add tomatoes i am using two tomatoes roughly chopped again cook it for 3-4 mins until turns mushy tomatoes are cooked now we will add the veggies which I am using today let me show you guys 1 carrot cut in small pieces 10-12 pieces of pumpkin 10-12 pieces of brinjal and 8-10 pieces.

of drum sticks add everything in the pan you can add or remove any veggies you want cook everything for a minute or two i add all the veggies at this stage because this way sambhar tastes better some people prefer to boil the veggies along with split pigeon peas but i feel that way veggies gets overcooked and that doesn't add much to the flavor of Sambhar if you want you can cook veggies that way also but i will recommend to follow my way after 2 mins, add some salt be careful while adding salt because we have added salt in Dal (split pigeon peas) as well then add 1/2 teaspoon of Kashmiri red chilie powder and two spoon of Sambhar Powder this is readymade Sambhar powder you can use any brand you like give it a mix so that all the veggies gets well coated with Sambhar Masala now we will add 4-5 tablespoon of tamarind water for which i had soaked some tamarind in warm water then i mashed it little and strained the water mix it then add 1/2 cup of water give it a mix cook on low-medium flame for 3-4 mins or until all the veggies are almost cooked veggies should not be completely cooked meanwhile let's check split pigeon peas remove the lid now the most important thing which you have to keep in mind is you don't have to grind it means don't use hand blender you can use wooden whisk very lightly.

this is the perfect texture of authentic Sambhar you can add some water to adjust the thickness this is the perfect consistency you can see the pigeon peas this is the texture we want to make authentic Sambhar remove the lid to check veggies wow, my home is filled with the aroma of Sambhar now take half onion and cut in cubes like this add it in the pan these looks great in Sambhar mix it you can even use shallots instead of Onion cubes add one small piece of Jaggery this will give sweet and tangy flavour to Sambhar if you want you can add sugar instead cook for one min after adding jaggery now add boiled split pigeon peas mix well and let it come to a boil you can see it is boiling so on high flame let it come to a boil then turn the flame to medium and let it boil for 3-4 mins at this stage you can adjust salt and water as you want boiling will make sure all the veggies gets properly cooked don't cover the pan with lid otherwise vegetables will get over cooked it's been 5 mins you can see how yummy it is looking vegetables are completely cooked you can see this Sambhar is nor too runny or too thick some people makes the Sambhar too runny and then it doesn't tastes rich so this is the perfect consistency add some finely chopped coriander and mix it so the restaurant style Sambhar is perfectly ready to serve serve it piping hot with some medu vada, idli or dosa you can even enjoy it with plain rice,
